I don’t have as much time this weekend (at least not so far) to do as much cooking as last Sunday, but I did decide to try a new recipe. This time, I was going for something that I could eat for breakfast. My go-to meal recently has been Aidell’s Chicken & Apple Sausage with a slice of cheese on it. They are pre-cooked, but I like to slice them longways and fry them in butter; I usually cook one or two in the evening, stick them in containers to grab on my way out the door in the morning, and pop them in the microwave at work when I get there.
This is something completely different from the sausage and cheese though. I’ve seen this recipe a couple of times and it’s in my bookmarks, but I hadn’t tried it until today. There’s also an almond flour version that’s on my list to try 🙂
Mr. Peanut Sandwich Bread
This is what it looked like before cooking:
+ I used Simply Jif creamy for most of the PB, but I ran out so I added some classic Chunky Jif to round out the one cup
+ I didn’t use any sweetener – there’s already some in my not-100%-plain-peanuts Jif and I don’t use any of the artificial ones at this point
+ I used a foil loaf pan I had up in a cabinet; it’s 8″x3.75″ (maybe 4″?)
+ I checked the loaf at 25 minutes – there was bubbly liquid in the corners that kind of freaked me out, but after cooking for 5 more minutes it was gone

The instructions said to let it cool before cutting, and I managed to behave until then 🙂 I’m pretty texture picky, and this felt a little odd to me at first, but it’s totally edible. (There are plenty of “regular” things that feel weird to me too.) I put butter and kosher salt on it, and it was tasty! It definitely tastes much less like peanut butter than it smells when it comes out of the oven. I’m going to try toasting it in a pan in the morning – no toaster right now – and I’ll report back.
